Although, that is not entirely true, there are some days when this could be my theme song.  Craig and I have always said that if our lives get so busy that we lose the fun in all the chaos, we will slow down and change the pace.  We aren’t there yet.  Actually we are just getting started but with three young kids meal times can be crazy times!  Dinner hour around here is very much our very own witching hour.  Especially when both Craig and I are working.

My kids love pasta and although I am quite fond of pasta, I don’t love it.  So when things get hairy around here, and I am looking for a quick meal, I will make a Pasta Salad.  It’s super easy and it tastes good too!

I use coloured fusilli pasta, one cucumber, one red pepper, one green pepper, feta cheese (crumbly works best) and zesty Italian salad dressing.  If I chop the red and green peppers fine enough the girls don’t even know they are there.  I keep the cucumber pieces bigger because they love cucumber and can see them in their pasta.  Sometimes I leave out the dressing for them.


This is a creamy feta cheese. It works with this dish but it does change the texture and I much prefer the crumbly feta.

Mix it all up in a big bowl and you have an entire meal right here! Or a side dish. It’s a staple here in the summer. When we went on our two week vacation, I boiled up some pasta for our roadside picnics and had everything else I needed in the cooler to add (aside from the feta cheese). It was a nice change from the peanut butter and jam sandwiches.

I have to tell you that everytime you have served this pasta salad, I rave about it! It is so yummy. And yesterday, I remembered that you had blogged about it. So I searched your blog and found the recipe. So here I am, thanking you for sharing the recipe…it was a big success – even my most pickiest eater gobbled it up.

I didn’t have feta cheese and it was just as good, but next time I will be sure to add it!
