No Bake Cookies

Another favourite recipe around here (especially at Christmas time) is No Bake Cookies.  These are easier to make than Christmas Crack .  All you need is:

2 Cups granulated sugar

1/2 Cup butter or margarine

1/2 Cup milk

1/2 cup of cocoa, sifted if lumpy

1.5 Cups quick-cooking oats

1 Cup unsweetened coconut.

It’s an easy recipe to put together.  Combine the first 4 ingredients in a saucepan.  Bring it to a boil on medium heat.  Once it boils, reduce the heat to medium low and let simmer for 5 minutes.  Stirring occasionally.  Remove from the heat.  Add the rolled oats and coconut.  Let stand for 10 to 15 minutes and drop by tablespoon onto a waxed lined cookie sheet.  I set these out in my garage in the winter to set for about an hour.  Then I freeze them or store in the fridge.  How long?  I have no idea how long these will store for because they never last long around here.  I’m lucky if they will make it to Christmas.

Macaroons are a hugehit in this house to. Just like the Christmas Crack!
